I recently came across two 18k NOS Disney Sheaffer LEs on eBay, one of which is now mine. It came with two nibs, an M and a stub. I'm wondering if all the Disney Sheaffers came with two nibs, including one stub, or is mine unusual?

That's the correct package when Sheaffer sold this limited edition. You have got a bargain: a limited edition based on the classic black that that doesn't auto-crack with an extra factory stub nib! Balance II replacement nibs alone if you have to order from Fort Madison will cost about $180 (but you can still buy a NOS from the same seller at a BIN price of less than $51.75--if you want an XF, hurry and make an offer). I had your pen on my radar but I didn't make it home on time to place a bid. Congrats!

As a mattert of fact, I've been wanting an XF, so this was VERY welcome info. Thank you BeRa!

 

As an aside, the material you refer to as self-cracking isn't always that way. I make pens and have made any number of them from the Serpentine, the Autumn Glow, the Cobalt, and the Crimson. They don't crack and aren't really even what I would call fragile. I'm theorizing that this material, which is very heat sensitive, was exposed to high temps in Sheaffer's manufacturing process.
